安化红茶辐照杀菌工艺研究
Research of Irradiation Practise for the Control of Microflora in Anhua Black Tea
摘要
采用60Co-γ射线辐照处理安化红茶,研究不同吸收剂量的杀菌效果及对其主要品质成分和感官品质的影响。结果表明,辐照处理杀菌效果显著,吸收剂量为5.93 kGy的辐照处理可将其菌落总数和霉菌数都控制在100 CFU?g-1以内;吸收剂量为10.13 kGy以内辐照对其主要品质成分及感官品质无明显影响。综合试验结果,确定了安化红茶辐照杀菌的适宜工艺剂量范围为4.0~6.0 kGy。
Abstract
A study was conducted to investigate the sterilization efficacy and changes of main components and sensory qualities of Anhua black tea irradiated by different doses of 60Co-γ irradiation. The results showed that γ irradiation was effective on the sterilization of Anhua black tea. Irradiation of a dose of 5.93 kGy could well control the total bacteria count and mould under 100 CFU?g-1 in Anhua black tea. Absorbed dose within 10.13 kGy irradiation would have no significant effects on its main components and sensory quality. It was concluded that the optimal irradiation practice dose for Anhua black tea was in the range of 4.0~6.0 kGy.
